Though a certain distinguished hotel claims the crimson cake, it should be known that red velvet cake has origins in Victorian England and was referred to as Red Velvet Luxury Cake with a tangy balance of cocoa and vanilla. Buttermilk and vinegar were also used. It was also referred to as Mahogany Cake and was lavished with Ermine Icing. Decades later when  butter, sugar and oil were rationed during WWII, beets were substituted.

A legend tells of a boarding house in Exeter, England where young girls secretly kept a white mouse as a pet. They named her Beulah Belle, fashioned tiny ensembles for her to wear and fed the mousekin red velvet cake. In commemoration of her, both this cake topper and her tale will delight guests almost as much as the cocoa cake that has endured the generations. Hand-painted. Cast in pine-resin from a commissioned artist’s sculpt. 5” diameter.
